dc.descriptionThe biggest dental and oral health problem commonly encountered is caries. Dental caries is the destruction of dental keries tissue caused by acids in carbohydrates through intermediate microorganisms present in the saliva. Salivary pH changes are influenced by daytime rhythms, type of food consumed, stimulation of salivary secretions, oral cavity microorganisms and salivary buffer capacity. Consumption of foods containing carbohydrates will be easily fermented by bacteria that produce acid and saliva pH to fall. Staple food is the main source of carbohydrates, one of tuber types such as sweet potatoes and potatoes. The purpose of this study was to determine the effect of salivary pH change after consuming sweet potato and potato.The type of research used is experimental research with the design of the research-test and post-test design. The sample of research is Tlogowungu Village PKK ladies amounting to 40 people divided into 2 groups consuming sweet potato and potato. Then compared the salivary pH change between consuming sweet potato and potato.Methods of data analysis using quantitative descriptive analysis.The results showed that salivary pH after consuming sweet potato tend to acid. Then salivary pH after potato consumption tends to basa. The average difference between salivary pH changes before and after treatment of sweet potato consumption was 0.5 times greater than the treatment of 0.4 potatoes. So there is a change of saliva pH between after and before consuming sweet potato and potato. Therefore, it is suggested to the public to be more observant in choosing a type of food containing carbohydrates and to stabilize saliva pH to remain neutral can be by gargling or drinking water.Keyword : Consuming Sweet Potato, Consuming Potato, Saliva Ph
